Make sure your lid is tightly sealed and avoid
opening the digester as much as possible. The
bokashi seals each layer of food waste and
therefore no flies are attracted and there is no
smell of rotting food. During the fermentation
process, pathogens are eliminated and no
measurable greenhouse gases are produced.
Step 4
When the digester is full, ensure it is properly
sealed and let the office know that your digester
is ready for collection. It will be collected,
emptied and returned clean to your home
within a few days.
I have heard from some Residents that they
think that this is a costly service, as you are
required to purchase your bins and your
monthly supply of bokashi powder. I think we
all need to consider the impact of sending
organic waste to landfill sites and weigh up
the costs versus the long-term benefits. Yes,
organic waste does decompose and while
doing so in a landfill, it creates odours and
generates methane gas. Methane gas in turn
is contributing to global warming – this is not
something anyone can ignore.

We should try to return the nutrients from food
waste to our soils to avoid the use of chemical
fertilisers in our gardens. Using the Bokashi
method, the organic material is broken down
through an anaerobic (no air) fermentation
process. This is revolutionary in the composting
industry because, by using Bokashi Bran, we can
compost cooked food, protein, and dairy safely
and make it available as a plant nutrient.
