veggies. Next, we have a 'Crustless Tuna Pie,' a quick, simple
delight that promises to please a crowd without breaking a
sweat in the kitchen.

This easy, no-fuss winner is perfect for a lazy brunch and a clever
way to use up those vegetable leftovers!
• Start with a standard scrambled egg mix (Deborah uses 5
eggs & 50ml milk).
• Add to a pan of lightly sautéed spinach and long-stemmed
broccoli heads or asparagus spears. Chopped red and
yellow sweet peppers can also be included for extra colour
and taste.
• Cook slowly on a low heat for 10-15 minutes.
• Add crumbled ricotta, feta, or mozzarella, plus salt & pep-
per to taste.
• Finish under the grill for 5 minutes, then turn out onto a
plate and slice.
• Garnish with finely chopped parsley or coriander.
