oanne Lund is the owner of Col’Cacchio restaurant, an
elegant Italian pizzeria in Dainfern Square. Although a
Jteacher by profession, Joanne always had a love for
the restaurant business and before opening Col’Cacchio,
she owned Café Frappe in the Valley Shopping Centre.
The hard lockdown at the end of March 2020 was a
stressful time for her. It was important that her staff, most of
whom had been with her since the opening of the restaurant
six years before, were looked after. As luck would have it,
they were able to use this time to take their annual leave
and, after five weeks, the restaurant was able to re-open for
